The coffee was harvested exclusively at full ripeness, and all stages of the process were carried out by the producer’s family. The cherries were dried on a tarp-covered patio in a thin layer for about 12 days, being turned roughly six times a day—or more when needed—to ensure even drying and careful handling. The lot was monitored constantly throughout the entire drying process.
