This Arara lot, selected for its excellent cup quality, was harvested fully ripe and hydraulically separated to ensure uniformity. The cherries then underwent a 192-hour anaerobic fermentation in sealed barrels before being dried on the patio for 21 days to reach ideal storage moisture. It was the producer’s first long-duration fermentation—a bold experiment that delivered exceptional results and a profile they were thrilled with.
