This coffee was selectively mechanically harvested and taken to the drying patio, where it was placed in thicker layers for the first three days and turned regularly to ensure even drying. The lot was then spread in a thinner layer to complete the drying process, continuing to dry slowly in the patio without mechanical dryers. Throughout this slow, natural process, the coffee developed characteristic fruity aromas while careful handling preserved its sweetness and overall quality.
