This special lot followed a fermentation protocol recommended by a specialist company, applied to fully ripe, intensely yellow cherries from a plot with a strong quality history. After harvest, the cherries were hydraulically washed, spread on a tarp, and inoculated with activated yeast, following techniques learned at a Sancoffee course. Fermentation lasted 48 hours, after which the coffee was dried on the patio for nine days, then finished through four days of intermittent drying until reaching ideal moisture. The lot was finally stored in wooden bins and rested for 19 days, completing a process designed to achieve a cup profile distinct from the farm’s usual production.
