The coffee was harvested in two selective passes to ensure only fully ripe cherries were picked. After harvest, the lot was placed on raised beds, being dried in thicker layers for the first three days before being spread thinly for uniform drying. Once it reached about 13% moisture, the coffee underwent intermittent drying in bags and was then finished in a static dryer until it reached 11.5%, the ideal level for storage and quality preservation.
