The coffee was manually and selectively harvested, prioritizing ripe cherries and removing any green ones on the patio. The cherries were taken to the patio within three hours to prevent fermentation. They were spread cherry by cherry for three days, then folded and rested for another three, repeating the cycle until half-dry. After that, the lot was spread daily, turned every 40–60 minutes, and covered in the late afternoon. Harvest days were kept separate to ensure uniformity. The entire patio process lasted about 20 days, until the coffee reached ~11% moisture, ideal for storage.
