This Red Catuaí lot underwent a 48-hour controlled pile fermentation, after which it was spread bean by bean on the patio and left untouched for two days for uniform initial drying. On the third day, it received its first turning and entered a five-day daily rotation routine. The coffee was then gathered into piles for a two-day rest before moving to the static dryer, where drying was completed under controlled conditions to ensure stability and preserve quality.
